Maple Pumpkin Oatmeal with Walnuts and Raisins

- 2 cups old fashioned rolled oats (not quick oats)
- ½ cup raisins
- ½ tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- ¼ tsp ground allspice
- ¼ tsp ground ginger
- 1 ½ - 2 cups water
- 1 cup milk, any type
- ⅔ cup canned pumpkin puree (not pumpkin pie filling)
- ¼ cup pure maple syrup
- 1 tsp vanilla extract
- ¼ tsp maple extract, optional
- walnuts and milk or cream, for serving
In a saucepan, combine the oats, raisins and spices. Add the water, milk, pumpkin, maple syrup, vanilla and maple extract.
Cook the oatmeal over medium heat for about 5-10 minutes, stirring frequently, until thick and creamy.
Spoon into bowls, and top with chopped walnuts and a little milk or cream. If you like your oatmeal sweeter, add an extra drizzle of pure maple syrup.
