Maple Pumpkin Oatmeal with Walnuts and Raisins

Ingredients
 

  • 2 cups old fashioned rolled oats (not quick oats)
  • ½ cup raisins
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ¼ tsp ground ginger
  • 1 ½ - 2 cups water
  • 1 cup milk, any type
  • cup canned pumpkin puree (not pumpkin pie filling)
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp maple extract, optional
  • walnuts and milk or cream, for serving

Instructions
 

  • In a saucepan, combine the oats, raisins and spices. Add the water, milk, pumpkin, maple syrup, vanilla and maple extract.
  • Cook the oatmeal over medium heat for about 5-10 minutes, stirring frequently, until thick and creamy.
  • Spoon into bowls, and top with chopped walnuts and a little milk or cream. If you like your oatmeal sweeter, add an extra drizzle of pure maple syrup.
