This mini apple crisp is the perfect dessert for one, with honey crisp apples baked with warm spices and vanilla, topped with buttery crumble topping and served hot with a scoop of ice cream.

12 or 16 oz ramekin (such as a mini Dutch oven, casserole dish or cocotte dish)

Filling
1large honey crisp apple
1tbspgranulated sugar
1tbsplight brown sugar
1tbspall-purpose flour
1tsplemon juice
½tspvanilla extract
¼tspground cinnamon
small pinchground nutmeg
small pinchground allspice
Topping
¼cupall-purpose flour
1tbsplight brown sugar
⅛tspcoarse Kosher salt(if using table salt, use half the amount)
1tbspunsalted butter,melted
Instructions
Preheat the oven to 350 F, and position a rack in the center of the oven. Lightly grease a 12 or 16-oz ramekin with softened butter or non-stick baking spray. (Instead of a ramekin, you can also use a mini 6-inch cast iron skillet.)
Peel and core the apple, then chop it into quarter inch pieces. In a bowl, combine the chopped apple with the rest of the filling ingredients. Scrape the apple mixture into the ramekin.
In the same bowl, combine all of the topping ingredients, then sprinkle the topping over the apples.
Bake the apple crisp for about 35 minutes, until the apples are soft and the topping is light golden brown.
Cool for 10 minutes, then serve hot with a scoop of ice cream.
