Ingredients
- Apple. I used a honey crisp apple. Their flavor and texture is great for baking.
- Sugar. A combination of granulated sugar and light brown sugar adds sweetness.
- Flour. All purpose flour thickens the crumble topping to give it structure.
- Lemon Juice. Adds a little tartness to enhance the flavor of the apple.
- Salt. Balances the sweetness and enhances flavors.
- Butter. Moistens the crumble topping and binds it together.
- Spices. You’ll need vanilla extract as well as ground cinnamon, nutmeg and allspice to add warmth and flavor.
Instructions
- Preheat the oven to 350 F, and position a rack in the center of the oven. Lightly grease a 12-oz ramekin with softened butter or non-stick baking spray. (Instead of a ramekin, you can also use a mini 6-inch cast iron skillet.)
- Peel and core the apple, then chop it into quarter inch pieces. In a bowl, combine the chopped apple with the rest of the filling ingredients. Scrape the apple mixture into the ramekin.
- In the same bowl, combine all of the topping ingredients, then sprinkle the topping over the apples.
- Bake the apple crisp for about 35 minutes, until the apples are soft and the topping is light golden brown.
- Cool for 10 minutes, then serve hot with a scoop of ice cream.

Frequently Asked Questions
I love honey crisp apples for baking, although I often use a combination of honey crisp and granny smith. Avoid varieties like gala, fuji and red delicious, which will turn mushy when baked.
