Mini Cakes

If you're just baking a cake for two people or a small family, a mini cake is the perfect size for celebrating, without having too much leftover cake.  Each of these recipes is approximately 1/4 the size of a standard 8-inch layer cake, and can be baked in 4 inch or 6 inch pans, yielding enough for 2-4 people.
